Don’t you love a dinner recipe you can make without a trip to the store? I sure do, which is why my pantry is full of cans, a “cantry” if you will. A well-stocked cantry makes homemade cooking easy. Not only are cans an easy way to keep quality ingredients on hand, they also cut down on prep time. For example, cracking open a can of diced tomatoes is a heck of a lot quicker than seeding, peeling, and chopping your own!
I was striving to make this Mediterranean Pasta with as many pantry ingredients as possible, but I couldn’t resist adding hummus for a rich, creamy texture. The crumbled feta added a nice salty flavor too, but otherwise your pantry is your best friend for this recipe! I’m pretty sure the Lindsay Ripe Green Olives I used are only available by can. I had actually never seen them before, but they’ll be a regular guest around here now. They are buttery, not tart like regular green olives. So good!
What are a few canned goods that are staples at your house? I always have canned tomatoes (soups and casseroles), broths (soups and stews), refried beans (quick burritos or appetizer), and canned fruit in juices (smoothies, baking, or parfaits).

OK, now are you ready for your pantry-friendly Mediterranean Pasta recipe? Let’s dig in!
Add chicken broth, water, and Italian seasoning to a dutch oven or large, deep skillet. Bring to a low boil over medium-high heat. Stir in chicken, olives, artichoke hearts, tomatoes. Return to a boil.
Stir in pasta, and continue cooking at a low boil, stirring occasionally, for the recommended cooking time on the pasta package.
Stir in hummus and mozzarella, and reduce heat to medium. Cook, stirring often, until cheese is melted. Sprinkle crumbled feta over the entire dish or on individual servings to taste.

This is actually two recipes, but they go so well together that I didn't want to split up the pair. Load your tortilla chips with seasoned beef and creamy cheese sauce, then watch them disappear!
